I discovered a fantastic recipe for Overnight, No-Cook Refrigerator Oatmeal at TheYummyLife.com. It is simply an amazing way to start the day and I had to share! Monica from TheYummyLife.com was very friendly and kindly granted me permission to share the image. This recipe will appeal to raw food enthusiasts, health fanatics and also those who are into efficiency and time management – as these are a “quick fix” and you can prepare a batch to last a couple of days. It also really appeals to me not to have to think in the morning and to be able to reach for something great… 🙂

Many people who have not studied raw food nutrition in great detail are not aware of the potential health benefits of soaking food instead of cooking it. One of the principles, simply, is that some of the nutrition is lost when food is cooked. So this recipe calls for simply mixing the ingredients together and then leaving overnight; by which time the oats soften and the chia seeds absorb liquid. As a final touch of class, fresh fruit is put on top.
