Now I don’t know about you, but as far as I am concerned, life without ice cream is… well… an “unacceptable reality”.
And did someone say mint choc chip? Always been my favorite flavor and probably always will be.
Now I don’t do dairy – because I am lactose intolerant (apart from the fact that humans were never actually meant to drink cow milk in the first place, and it is not right for our bodies!)
So you can imagine my delight to discover this recipe for dairy free mint choc chip ice cream using coconut milk. Ka-ching! Struck gold!
Even better – an ice cream maker machine is not required – which is great, because I don’t have one! (You will of course need a freezer.) It will take some minutes of “elbow” to do this project but it is easy, “low tech”, inexpensive – and when done right, comes out soft and fluffy just like “real” ice cream.
This recipe contains only eggs, sugar, chocolate, peppermint essential oil and coconut milk.
