Check out this super-amazing watermelon cake that we discovered!
You don’t need many ingredients to make this cake and the prep time is listed at 15 minutes, which is much faster than that of an “ordinary” cake. This cake is based around a seedless watermelon, which is trimmed to the shape of a cake! The topping is whipped full-fat coconut milk, almonds / coconut / other nuts, and whatever fresh fruit you want to arrange on top.
You can substitute the coconut milk for yogurt or whipped cream if you wish; and of course customize the recipe in whatever way you wish. See if you can keep it healthy though. 😉 I’d like to see someone slice it horizontally and get some layers going with that delicious coconut whip.
The Paleo diet is interesting. It’s based on the food humans’ ancient “hunter gatherer” ancestors might likely have eaten, such as lean meat, nuts and berries. The theory behind it is that our bodies are “evolutionarily designed” to eat this kind of diet and that the diet of the agricultural age – grains, legumes and dairy – is not suited to our metabolism. Proponents of the Paleo diet may argue that the modern diseases of obesity, heart disease and so on are results of the modern agricultural diet – and while it’s hard to understand everything about our ancient ancestors, you’ve got to agree that they might have a point.
