Our friends over at Eat Local Grown have collected a great list of 10 signs of gluten intolerance which makes for some very interesting reading and we had to share.
One of the most obvious signals would be Keratosis Pilaris aka “chicken skin” – but what is interesting is that the vast majority of people who have either gluten intolerance or celiac disease are never diagnosed. If you have these symptoms it might be worth not only checking in with your doc but also considering the possibility that diet may be influencing your health. Maybe it’s time for a change?
One important thing to note, according to Eat Local Grown, is that gluten, being a large protein, may take months to eliminate from the system and so an elimination diet lasting for a few weeks before re-introduction is typically required to test for gluten intolerance.
One of the challenges of this type of diet is that the elimination is recommended to be 100% – which is a challenge in the age of foods with long or even obscure lists of ingredients.
